another day

Victor's had a bad cough lately so that with the diarrhea had us sending him to his pedi today. She was actually out so he saw someone else. That Dr said the diarrhea was probably due to the nasal drip and had nothing to do with being gluten free. She prescribed Zithromax because she said it was likely he had an infection. I'm not so keen on giving him antibiotics when I don't know for sure but his cough is really bad and even my husband is going to take the antibiotics cause he has it too.

I made a meatloaf last night that Victor really loved thankfully :). I wanted to give it to him for dinner but I wasn't sure about the barbecue sauce I used so I had to wait till today during their office ours to call them and yay it is GF. Now I have to think about dinner tonight!

TGIF! I am so tired.

You need to give me your meat loaf recipe. I have been trying to find a good one for Austin. DH & I won't eat meat loaf but I read that you can make a batch and then put them in little muffin tins to cook so you have mini meatloafs for the little ones.

Sure it's pretty simple actually.

I take ground beef and add salt, pepper, garlic powder (or minced garlic if you are up for it), chopped onion, 1/4 cup barbecue sauce, and I substituted Glutino crispy bread for breadcrumbs. I used about 4 of them and just smashed them up in a ziplock. Sometimes I put some chopped potatoes in there too but I didn't this time. Then you put it in a loaf pan and add more barbecue sauce over it to coat it then put in over 350 degrees for an hour.

oh its about 1 1/2 pounds of ground beef - whatever the package happens to be - sometimes its only a pound.

I hope Victor is feeling better. It's so hard when they are sick, poor little things.

I'm glad you talked to your doctor about the poop issue. I didn't have a chance to write, but for us, GFCF has more of a tendancy to go the other way (constipation) because of all the rice products.

Since our guy tended to looseness prior to GFCF, the GFCF actually firmed things up for him.

Sorry to be talking about this subject! Mostly I just hope Victor feels better.
